This week we’re talking to My Eastern Shore Wedding’s king of cake, Chef Steve Anthony! If you’re on the search for perfectly paired flavors and creatively designed cake, these are the 5 things you need to know:

Designers specialize in different mediums and techniques…check their social media and website to see if their esthetic meets your vision (Not all designers are skilled in sculpted cakes, fondant or sugar work). Don’t be afraid to ask about their education or training.

A good baker should design something unique and special just for you…not just recreate a picture of something that has already been done. You want to trust your designer’s vision and give them the creative license. Ask for a couple of design options and work with them to create your perfect cake.

Your cake should not only look beautiful on the outside but also on the inside. What does the slice of cake look like…think about the presentation to your guests. The ratio of cake to filling should be almost equal. A standard wedding cake should have at least 4 layers of cake and 3 layers of filling. If slices aren’t offered in the tasting, consider ordering a small cake to see if it looks pretty when sliced.

Flavor, flavor, flavor!!! When your cake is sliced, the majority of what your guests eat is cake and filling, not buttercream. How does the flavor and texture of the cake and filling complement each other? Look for a cake with interesting and complimentary flavors. Ask about the timeline of the baking on your cake. Is it made days before your wedding or is it pulled it out of the freezer from 6 months ago? What measures does your baker take to ensure freshness and taste?

Who will deliver your cake? Will your designer deliver the cake or is it just a driver? A delivery person may not have the capabilities to fix your cake if something happens in transit. You are hiring the designer and want to trust their vision for the set-up.
